Industrial freezing of strawberries is a process in which strawberries are cooled quickly to below freezing temperatures in order to keep them fresh and tasty. This is an important way of storing strawberries for a long time, especially in the case of a overharvest or providing the products throughout the year.

Strawberries are usually treated with heat before freezing so that potential bacteria are killed and ingredients that could cause delamination during freezing are removed. Then they are packaged and stored at temperatures below -18°C.

Strawberry stem can be removed or left on during industrial freezing, depending on the purpose and use of the frozen strawberries. Often the stems are removed before freezing to facilitate their use in further production, e.g. in yoghurt or compotes.

Frozen strawberries are popular ingredients in many food products such as jams, compotes, ice creams and desserts. They can also be used to make smoothies, cocktails or as a topping for cakes.
